Kensuke is Shinji and Toji's friend/classmate. He is also an EVA pilot candidate (however, we don't see him piloting).
He has an extreme interest in military paraphernalia and war, especially the Evangelions.
He wants to be an EVA pilot so badly that he becomes jealous of Shinji at some points (also for being able to live with Misato).
Even though he's seen the consequences of being a pilot (e.g. Toji being hospitalized) he is still extremely determined to become a pilot.
Kensuke also suprisingly knows more about NERV than Shinji does, as he's hacked into his father's data files to get info on neumerous occasions.
Hikari is the previously mentioned love interest of Toji, who doesn't get to express her love to Toji due to his hospitalization.
She is also the class representative, making her come off as quite grumpy and rule-abiding.
However, she does also have a sweet and caring side when it comes to her family and friends.
Also, she is the only one in the class who can actually approach and talk to Asuka (which is saying a lot, as Rei is in the same class).
Pen Pen (or Pen²) is Misato's other roommate who is also a penguin.
He has a very high IQ which allows him to basically act as if he were human and live independently.
Originally, he was created to be the mascot of the series, and was also going to originally be a monkey.
Though, he was changed to a hot spring penguin as Hakone (the place Evangelion is set in) is known for it's hot springs.
Because of how chill Pen Pen is, the fans love him. So much so that there is a Pen Pen kigurumi (or onsie) you can buy.
This is Asuka's father, and there's not really much to know about him other than the fact that he had an affair with his wife
(we don't even know his first name!!)
The only thing worth mentioning here is that he was married to Kyoko's doctor around the time of Kyoko's funeral.
Maya Ibuki is one of the three main technical operators at NERV.
Her job is to keep track and report on the synchronisation rate between the pilots and their EVAs.
She is also the subordinate to Ristuko, for whom she feels some adoration towards.
During Human Instrumentality, Lilith takes the form of Ritsuko to achieve her instrumentality.
This specific scene in End of Evangelion implies very heavily that Maya felt come sort of romantic feelings towards Ritsuko.
(In my opinion, Maya is a great and underrated character. If Kaworu didn't exist she'd definitley be the #1 queer nge character).
There are 3 members in NERV who are ranked as first lieutenants, those being Maya Ibuki, Shigeru Aoba, and Makoto Hyuga.

These 3 lieutenants are also the computer technicians that are tasked with relaying important information to Misato during angel attacks.
There's not really much to know about them other than that, but they all seem pretty chill and underrated.
Fuyutsuki is Gendo's right hand man and the second in command at NERV.
He has known Gendo before Yui had 'died' (which predates the Second Impact).
It is also implied that he had some romantic interest in Yui, as he was shocked to learn that she was marrying Gendo.
In End of Evangelion, Lilith/Rei takes the form of Yui to achieve Fuyutsuki's Instrumentality.
Though SEELE is very important because of its involvement in Instrumentality and control over most organizations, not much is known about its members.
But to be honest, we don't need to know the members that much.
All thats really needed to be known is that a few members of SEELE (named the Human Instrumentality committee) meet with Gendo every so often.
Misato's father who saved her during the Third impact.He and his expedition team were responsible for awakening Adam.
He onyl appears breifly during a flashback, and is said to be simmilar to Kaji (I'm guessing in terms of personality??)
Ritsuko's mother.She was a cheif scientist at Gerhin who was heavily involved in the creation of Evangelions and
also developed the Magi supercomputers,in which she copied her own thoughts into.
After Yui's death, she began being involved romantically with Gendo. However, this was short lived.
Rei 1 (AKA child Rei) then told Naoko what Gendo thought of her, leading to Naoko going into a fit of rage and strangling Rei.
Once she realised what she had done (and also not knowing that Rei was expendable), she threw herself off of a platform in the NERV headquarters,
colliding with the Magi system blocks and dying.
The angels are one of the main enemies in the series, and also the descendants of Adam.
They have some abilities simmilar to the Evangelions, such as having an A.T feild, regeneration, and extreme strength.
(the abilities of each angel varies on which angel it is)
However, it is said that the 18th angel is humanity itself, but how can this be if humans are descendants from Lilith and not Adam?
I'm not actually sure, but my guess is that Adam's angels came to earth first,
and then after that Lilith arrived, wiping out Adam (BUT NOT THE ANGEL OFFSPRING) and populating earth with humanity.
